I already had a large balanced meal 2 hours before the gym and dont want to consume more carbs for the day, I plan on eating a second meal later (with no carbs).
However, since vegetables are simple carbs, im wondering if they be as affective as fruit to refuel after my workout?
I understand that non-starchy vegetables have much less sugar than fruit, so i was thinking about blending a cup of cilantro and two cups of spring mix with water and lemon in a smoothie.

Leafy greens are not fuel. They provide micronutrients, but their energy contribution is negligible, often less than the energy required to digest them.
Fear of carbohydrates is silly. Our ancestors ate everything that wasn't poisonous. That includes starchy plants. Low carb and athletic training are a poor combination. Glucose is the preferred fuel for feats of speed and strength.

Why do you need to refuel after a workout? Why not work out fasted and continue fasted for a at least a couple of hours after your workout.
