You can use milk kefir grains with almond milk but BELCH! I tried it and it was very unpleasant. The milk sort of curdled and it tasted unpleasantly sour. The fermentation is pretty quick, too, far less time than fermenting milk. Coconut milk ferments better with dairy kefir grains, but it also ferments quickly, so you have to keep an eye on it.
Give it a try and see if you like it or not. Don't forget that you have to "rest" the grains in dairy milk or they will not survive in the long term.
