ways to eat kale raw

Anyone know of good raw kale recipes, salads etc.

i always eat it cooked.

They do another one with tons of garlic and Parmesan cheese (not so paleo) that is really yummy.

I love shredded kale salad, they have a good one at my local co-op called the "Emerald City" with a lemon juice and olive oil dressing, diced peppers and a little wild rice, but I also stay mindful that raw cruciferous vegetables have more goitrogens and are best digested cooked, so I have it as a small side instead of the main part of my meal.

KALE PESTO. Great on everything. Kale, walnuts, garlic, olive oil, raw pecorino.

Best way to eat raw kale is in a smoothie. Blend it up with some fresh fruit, ice, nuts, etc. and you will barely even taste it!

Mash 1 avocado/ juice 1 lime/ throw in sea salt/ mix together in bowl./ throw in bite-sized de-leafed lacinato or curly kale./ massage green slime (yum) into kale thoroughly./ let sit for at least 5 minutes, and consume! If you don't do citrus, raw apple cider vinegar works too. The acidity of these things "cooks" the kale so it's more digestible.

I used a large kale leaf from my garden as a lettuce wrap with some grass fed steak for lunch today.

Slice really thin, massage with olive oil for a few minutes, add sea salt + chopped mango + pepitas + lemon juice. Super tasty. This works best with the lacinato / dino kale.

Also great in green smoothies.

I make a dressing of minced garlic, 1 tsp honey (or to taste) juice of a lemon, pinch of salt and 2-4 Tbsp. of olive oil (lemon olive oil, if you can find it.) massage that into a head of torn kale for a min or 2. Delish!

A couple of salad recipes I've used:

1) Kale, olive oil, raisins and/or cranberries, sunflower seeds and/or nuts 2) Kale, finely chopped bacon, bacon grease or olive oil to massage into the leaves, grilled peaches

I'm also fond of kale chips, which are cooked but are different than your typical sauteed kale:

Chop kale Massage with olive oil (about 1 T. per head of kale) Add sea salt and other seasonings to taste Bake at 300 F for ~20 minutes. Watch closely, because it can burn easily.

Whole Paycheck makes a pretty good kale salad - Lacinato kale, dried cranberries & pine nuts. I do a dressing of olive oil & lemon.

I hear a lot about adding kale to smoothies, though I've yet to try it, myself.

I do a lot of smoothies with it. A good trick it is to freeze your kale. Freezing kale (and any other leafy green like spinach, beet tops or chard) makes it a lot more easily blendable, so you can use a submersion mixer or regular blender without investing in an expensive BlendTec or Vitamix (although I have a $100 Nutribullet and I love that thing beyond words).
