I like to snack on carrots, maybe eating 1 or 2 a few times a week. From what I've read, eating 3 a day for an extended period will turn you orange.
Looking up a vegetable juice recipe (bruce lee's), I see it calls for 2lbs of carrots. 2 pounds?? How often can you drink this stuff?
Edit: Maybe it's 1lb of carrots. I see he often used carrots for half the juice (the rest being apple juice / celery / parsley or other green vegetables). Still, seems like a lot of orange-potential for a frequent drink.
Side note, I'd like to add more carbs / juices but I've never tried carrot juice (didn't sound very appealing pre-paleo.)

1 or 2 a few times a week won't turn you into an oompa loompa. I usually eat at least 1 a day (raw) and include them in my juices too. I'm not a carrot expert but i really wouldn't worry about it, so long as you're not eating a bag a day and give yourself vitamin A toxicity.
Sidenote: Try adding a bit of ginger or lemon to that juice to zest it up a bit :)
