Does drinking sparkling water break your fast if you were on IF? I.e. on something like 16/8 fast/eat

No, that would not break your fast.

A fast is broken by eating energy bearing food stuffs (i.e. stuff with calories), and it takes more than trace calories to do so. Most "gurus" out there suggest even upwards of 100 Calories won't break a fast (the same "gurus" who tend to say it's okay to have cream in coffee during a fast).

I'm of the opinion that one shouldn't have any calories beyond very trace amounts - so water, black coffee, plain tea would all be okay on a fast.

Suffice to say, carbon + water doesn't contain any calories, just like normal water. Enjoy your sparkles.
