I've been using a 16/8 IF protocol for a long time now and rarely feel hungry before 12:30/13:00 when I would eat lunch. I also don't usually drink coffee in this time period and occasionally have a green tea.
However, this morning I made myself one and put a little bit of organic butter and organic coconut oil in (roughly a level teaspoon of each). I then proceeded to feel quite awake for the next two hours, but a little bit sleepy and quite hungry especially in the run up to lunch. Considering my reaction is the coffee a bad idea for me at this point of the day and/or should I not have the butter/oil?

Coffee can be quite beneficial, this is not necessarily a bad reaction to coffee. It will increase your cortisol levels and your adrenaline, which in turn will have you use up your energy reserves, so you'll get hungry.
Coconut oil can be used to induce fat loss because of the MCT inside of it. If you're not yet fully adapted to burn fat, it may take a while for your mitochondria to notice this "new" fuel source that they can use.
