I'm 23 years old, male, workout everyday. I follow LeanGains protocol of everyday fasting.
I have 6.5%BF measured by bioimpedance, but some time ago, I fell that I'm more "covered", even with the low %BF. After eating, I get more defined.
Water retention? Cortisol?
How can I fix this?

If you're more defined after eating, especially if it's carbs, it's probably the carbs replenishing muscle glycogen. Water retention also plays a role of course.
