I've had at least 5 separate labs in the past 3 years for a variety of bloodwork and I have no insulin resistance or metabolic syndrome.

The type of insulin resistance experienced on low carb isn't the same as in diabetes. It's an attempt to spare enough glucose for brain cells and red blood cells, in this case, muscle ignore insulin as a signal to accept glucose, and instead use ketones/FFAs for energy.
The question of carb intake should only be based on your lifestyle needs, to match your workout.
