I read all the time how inflammation is the key behind metabolic disasters, cancer, all that. What actually gets inflamed? Last week, I made a couple bad food choices last weekend and had a couple fried gyoza's, fried breaded cheese, too much rice, and too many potatoes. I actually gained 8 lbs in 2 days! My belly looked like I was 6 mo pregnant, I felt awful, my eyes were swollen. LC since then and some good salmon and moose steaks. Lost 6 of the 8 lbs in 3 days.
So what happened in my body? Is this what they mean by "inflammation"? I didn't notice I was sweating less or peeing less--so how did I get 8 lbs of water infused into my body?

Basically what's happening is your body has become conditioned at such a carb restrictive diet it is reacting to all the starch that you're putting into your body. I'm the same way with high fructose corn syrup, if I get a wild hair and I'm at the movie theater and sneak a handful of my kid's Twizzlers (that contain wheat flour as well) I'll start breaking into a sweat, get dizzy and start getting super giddy for a few minutes and then I'll crash and want to take a two hour nap.
