Bulletproof "get some" ice cream?

Recipe found here: Dave Asprey's "get some" ice cream

Anyone ever try this? Its an ice cream that is basically 8 eggs blended with aporoximately 15 Tbsp of coconut oil/ gf butter/ mct oil, sweetened with xylitol (personally ide use honey or maple syrup) and flavored with cocoa and vanilla.

More bulletproof bullshit or legit recipe?

Don't be fooled -- coconut crystals *is* sugar, in the same way that maple syrup is sugar -- it's just not a refined, white sugar type product. Regardless, that's not a reason for-or-against using it; however, be aware: you're not replacing sugar with it, you're simply switching the type of sugar you are using.

If you like the taste, go for it. I don't mind it in some things, but not in my coffee.

Tried making icream with xylitol not so great. Left a kind of rough scratchy feeling at the back of the throat. In the end I just used sugar.

I modified it a bit to fit the ingredients I had on hand (and had no ice cream maker) but was still pretty good, tasted nice.

Pretty much a frozen fat bomb. I didn't make it, so cannot attest to its texture/flavor. Seems like a LOT of xylitol. I have nothing against xylitol, it's my sweetener of choice but I usually use much less than called for. I can't abide stevia.

Peter Attia's coffee ice cream recipe here http://eatingacademy.com/quick-faq#ice-cream is really good. I've substituted canned coconut milk for the dairy cream with no problem, and I add two pastured egg yolks (yes, raw)and skip the almond extract. It also has xylitol but not nearly as much.

has anyone ever tried coconut crystals in place of sugar. it is available at Trader Joe's and Whole Foods and has a pleasant sweet taste with a slight coconut flavor. ive used it everywhere that requires sugar and especially to sweeten my coffee.
