Help me hack my blood results and vitamin deficiencies (Lots of Info)

hello, I am a 32f. Not obese, but could stand to lose a few pounds like 10-15. I was very muscular before I started eating like crap due to a outdoor trip that lasted over 3 months (fast carbs, no meat, process cheese, no veggies, etc). though the backpacking trip was strenous I actually gained weight, my cardio capacity was the only thing that improved and my calves! I noticed some hypoglecemia and stress symptoms while on my trip too as I was not in control of what I ate and when I felt like I needed to rest more. I have returned and within a month of being back I started having a lot of stress and anxiety, mild depression, hypoglecemia/hypotension symptoms. I was working out trying to lose weight, It wasnt super hardcore, but I think I was not eating enough period to support my body. meat, fat, calories! So I changed up my diet and added way more fat (fish oil, avocado, coconut)and variety of proteins (eggs, meat, fish,liver). As far as carbs I eat veggies/sweet potato mostly and a serving of oats in morning. Dont indulge in breads or sweets. If I feel i need sugar I drink a kombucha or greek yogurt with stevia. I dont eat much fruit as it causes me to want more sugar. Berries are only in moderation when they are cheap. Also I have stopped caffeine/dark chocolate for over 3 weeks now!just incase it caused the anxiety.. SOme of my symptoms have gotten better, but I am lightheaded mostly all day and somedays I have energy and others I dont. My only exercise consist of walking and light cyling and push ups/situps. I am taking it easy in case I have adrenal issues or just need rest, so forth. But, I overall use to be a very active person, which kinda makes me sad when I cant release stress by exercising like I used too. I am pretty strong willed person and when I dont feel like doing anything can will myself to walk, so I know that maybe I am not truly extremely exhausted but just mentally out of it too. My moods can go all over the place too. crying, irritated, depressed. my Periods for last 2 months have been off. Coming earlier than usual. I am currently deficient in Vitamin b3(niacin), Vitmain b1 (thiamine), Calcium, Oleic Acid, cysteine and vitamin D and zinc is not deficient but on low end. Vitamin C and Magnesium, b12 are in good range. My cholesterol numbers and low and not usual for me : HDL 56 , LDL 88, triglycerides are in healthy range just concerned about my low HDL messing with overall hormone production. I noticed I dont feel as well when my HDL levels are this low too. Oh and before I forget sleep is up and down. I usually get about 6 hrs average sometimes more. But, noticed I wake up a lot during night. sometimes to pee, sometimes due to my neck/tension, sometimes for no reason I just wake up , but find myself falling back asleep. I have always been early riser and don;t have trouble getting out of bed in the morning. I been going to bed before 10pm.

Any info would be appreciated. Also I am currently taking supplements for my vitamin and mineral deficienies.
