I have only tried organic grass-fed beef heart, which I love. I am having trouble finding any right now and have a chance to get pig heart instead. I have always assumed that it was better to get the heart of a ruminant like deer, goat, lamb and cow, but is this true?
Is there a hierarchy of desirability for mammal heart if we assume all are organic and can eat all the grass they want? I know the answer regarding pig might depend on what they are eating (corn, soy etc...) and I am not sure I can find out. I do know they are pastured which I take to mean that they can eat grass if they want to.
