They are concerned that I drink 4 bottles of GT SYNERGY KOMBUCHA every day. I quoting drinking Wine 2 years ago and replaced it with this. Is there Anything wrong? It is very expensive though. Where/how can I get it less expensively and is it addictive, why do I like it So much?

I've also become quite addicted to Kombucha and probably average around half a bottle a day. It has totally quelled my sweet tooth and is something I look forward to every day. I know it is good stuff, but too much of anything can be a bad thing, so I'm also curious as to the answer to this question.

I went to their website to look at the nutrition facts, here's what they say:

Nutrition Facts
Serving Size 8 fl. oz.
Servings Per Container 2
Amount Per Serving
Calories 30
Calories from Fat 0
% Daily Value*
Total Fat 0g 0%
Cholesterol 0mg 0%
Sodium 10mg 1%
Total Carbohydrate 8g (2%)
Sugars 3g
Protein 0g
ADDITIONAL NUTRIENTS (per bottle):
Folic Acid 25%
Vitamin B1 20%
Vitamin B2 20%
Vitamin B3 20%
Vitamin B6 20%
Vitamin B12 20%
PROBIOTIC CONTENT:
Lactobacillus Bacterium: 1 billion organisms
S. Boulardii: 1 billion organisms
ANTIOXIDANTS & ORGANIC ACIDS
EGCG 100mg - Glucuronic Acid 10 mg L(+) Lactic Acid 25mg - Acetic Acid 30 mg

So 4 bottles is 8 servings, that's 64g of carbs just in your drink. I think that's a lot. Others here will probably disagree with me. But to be honest, that's the only thing (other than expense) that I can find wrong with it.

Make it

It is one of the easiest fermentations you can do.

You need a SCOOBY (also called a Kombuncha mushroom), you can buy one or you can leave a bottle of unpasturized kombuncha exposed to air until a pancake looking thing develops on top.

Then you put that in strong sweet tea and leave it until it turn lighter and tastes right.

Then point out to your friends you are basically just drinking sweet tea (ok not completely true, but that is the base :) )

Buy a scoby and make your own, much more cost effective especially if you're drinking 4-bottles a day. Not sure where you live but they're pretty available in New York, you can buy online, or make your own - many good links on the intertubes available! As a homebrewer please make sure you keep things as sterile as possible so there isn't any contamination to your product. Use steel and bottle in glass - you can use Mason jars or get some fliptop bottles.

I've never heard of an addiction to Kombucha as it's low in sugar.. but I know that there are different levels in alcohol content, especially when brewing your own, you can go up and over 5%, which could be a factor. Where I used to work we brewed there and would play around to see how far we could push it. Commercial brands are definitely lower, I believe ours was at just about 2%.

Everyone has their thoughts on if it's Paleo or not due to the yeast and sugar, and vinegar isn't Paleo but many incorporate that into their diets. Ultimately, its your decision on whatever feels best for you :)
