Chronic Indigestion and bloating

I have a chronic struggle with indigestion. I've been moderately to strict paleo/WAPish since 2011. I've gone through periods of treating leaky gut and SIBO and both are not an issue at this time. But what I continually struggle with is food digesting EXTREMELY slowly, causing bloating in my stomach and duodenal/upper right quadrant region, fatigue and mood/energy swings/anxiety post digestion.

I used to think it was coffe, but that seems to be a secondary trigger. It could be too much snacking and too large of meals. Or fat. I'm curious about fats being alkaline, causing an overly alkaline environment. Or too much snacking or something else. It doesn't seem to be inflammatory as it doesn't cause the leaky gut/SIBO symptoms of the past. I'll go for days to weeks where it takes until my next meal about 5-6 hours later for my previous meal to digest and empty from my stomach. 

Any other ideas? I may just snack too much and not allow myself to ever get hungry before eating causing my digestive system to never be able to catch up. May try more acids with meals or HCL and pepsin.

How much are you sitting? I had slow digestion and found that walking 10,000 steps, broken up throughout the day, helps enormously.

Also, is it possible that you are undereating? That can slow down digestion.
