Ground bison recipes

I'm looking for some recipes using ground bison. I'm allergic to beef, bison is a great substitute but I can only ever find it ground. (If anyone knows where I can get bison steaks in the Chicago area, please speak up!) I'm tired of eating it formed into patties for burgers. What else can I do with it?

Pretty much any recipe that calls for ground beef could use ground bison instead. Think Chili recipes, thai curries (replace the chicken normally suggested), stir fries, etc.

Oh wow! I have never heard of a BEEF allergy before! I am surprised you're okay with bison. Have you ever had elk, ostrich, venison, goat, wild boar or kangaroo? Those are other alternatives that ROCK! :)

Bison recipes... Well I LOVE mixing my ground bison with olives, sun-dried tomatoes and diced up spinach... You could also mix in some onions as well (caramolized or raw). Mmm So good! :) I also sometimes just mix salsa into the ground meat - Excellent!

So good in a sweet potato hash with spinach. Make a ton and it's a great snack! Love it for breakfast with a fried egg. Yum!

You could try cottage pie http://paleodietlifestyle.com/lamb-sweet-potato-cottage-pie/ only you could sub bison for lamb, which is called for in the recipe Or you could try Moroccan meatballs (Kefta) with bison meat http://moroccanfood.about.com/od/beeflambandgoatrecipes/r/Kefta_in_butter_sauce.htm just sub any non-paleo ingredients

I LOVE bison and eat it 4-5 times a week. There are places online to order it shipped, if you want steaks, in fact I think there is one near Chicago. My local Market Basket carries Great Range bison steaks, from a large ranch in Colorado, they are awesome! Ground bison can be used to make shepherd's pie type dishes, layered with potatoes or sweet potatoes (you can find recipes online). I also crumble it up and fry it with chopped onions etc. then add it to my morning omelet, sometimes with other veggies. Basically look up recipes for ground beef and adapt them. Be creative!
