As Amaranth, Buckwheat and Quinoa are not allowed even they are pseudo-grains, I am wondering if they can be incorporated while sprouted becoming more like veggies ?

I eat sprouted buckwheat from time to time. I either make granola with it or turn it into crepes or pancakes or oatmeal-type hot cereal. I wouldn't consider it paleo but I think many would do just fine with it and I know of several paleo eaters who use it as a treat. Whether you decide to incorporate into your diet will depend on your goals and how your body reacts to it.
