I'm a newbie but totally loving the Paleo life. I do have one issue though and that is with failure after failure with gluten free flour. I've always been a very good cook and baker, but for some reason everything I try to bake using gluten free flour is a complete failure. Nothing ever turns out like the picture showing nice fluffy pancakes etc... mine look more like crepes LOL. I want to be able to offer my family a splurge every now and again with a paleo goodie but everything I have tried has failed. I am at a point of not trying anything because I can't see wasting expensive baking flours only to fail and throw it in the garbage. I have read that it is difficult to use these flours but I expect something to work when I follow a recipe to a T with no substitutions and everything measured exact. I have also check the temperatures in my oven to make sure I have no temp variances or hot spots etc... Is it just me or am I doing something wrong? I'm holding out hope! Thanks for any input or suggestions!
