Grains are VITAL to your existence!

Is it any wonder that CW still prevails among the masses?

"unless people are very careful, a gluten-free diet can lack vitamins, minerals, and fiber".

What a crock. How about you replace the vitamins, minerals and fiber from grains with something else?

I hate hate hate unsolicited health advice, especially from strangers. You should have told her that her desired profession has already been replaced by the internet.

I once had a chit of a girl wait on me at a restaurant that was studying to be a dietician. When we refused the bread basket, she told us that she would NEVER recommend someone who wasn't diagnosed with celiac go without gluten, for those very reasons - we'd be missing essential vitamins, minerals and fiber. She got a tad huffy when I told her there wasn't anything in wheat (or any other grain, for that matter) that you couldn't get in much greater quantities from other foods, including animal products.

She didn't like that answer. She also didn't get a very good tip.

I've even had a serious celiac sufferer tell me that, if you don't have a gluten intolerance, you need to eat gluten. She seemed to see it like there's a switch in your genes: either your cells need gluten for some essential purpose, or something got switched so it's a poison to them. No in between.
