Cooking Dried Fruits?

I understand dried fruits can be moldy. but when you cook mold, does it die? i'm on SCD with hopes of eliminating candida, and like to eat cooked raisins in my almond flour cookies. anyone have thoughts on if this is ok? thanks!

Dried fruit is concentrated sugar, which also feeds candida.

For SCD or GAPS monosaccharides in dried fruit are allowed and even encouraged in small amounts. Disaccharides like starches and grains are discouraged because a they freed pathogenic gut bacteria. Nothing wrong with carbs on a gut protocol if they are the right kind of carbs.

In general it's not the mold itself that could be a problem, it's the toxins it produces, and cooking does little to remove these.

In general it's not the mold itself that could be a problem, it's the sugar in the dried fruit, and cooking only removes nutrients and enzymes.

No guys, she's referring to mycotoxins and mold which can be terrible for people on SCD or GAPS because they are attempting to heal their gut.

To answer your question, cooking doesn't break down the mycotoxins but it will kill any potential mold. Ideally one would dehydrate their own fruit, next option would be to buy from a local producer, third would be to skip it. :-)

If the fruit (or any food) is visibly moldy, best just to throw it out. Recently-purchased raisins are usually fine, mold-wise.
