Frying Fish with Cornmeal

Can someone explain why it would be bad to use cornmeal to make a coating for baked or fried fish? Especially if this would help make fish more palatable to family resulting in more fish meals?? No other grains and no seed oils are being consumed.

I've had pretty good luck frying fish without any breading at all, just some salt and pepper. I've been meaning to try just coating it with egg and frying that way, but haven't yet.

Yes - i second coconut - either flakes or flour - it adds a wonderful flavour too

Corn is bad, cornmeal (treated with caustics for grinding) especially so. That being said, if your family goal is "no gluten" then read your labels. Personally, I've started using coconut flour to make fried chicken nuggets for my 6-year-old. Haven't tried it with fish yet.

I prefer almond flour as well. Coconut flour doesn't seem to get crispy enough, while the almond flour crisps up nicely.

I like almond flour. It does the job nicely and doesn't have the strong flavor of coconut flour.

Corn is a grain, and grain isn't Paleo. But it is gluten free, so it's better than wheat.

If you do use corn, make sure it's organic or it will be GMO. Also buy cornmeal in a package, in the bins the grain can be rancid.
