Which compounds protect us against poisons?

Hi,

it seems that selenium binds to mercury, thus inhibiting it's toxicity.

Also there are some hints that vitamin c neutralizes PCB, or at least helps to flush it out.

I was wondering if there are any other vitamins/minerals/flavonoids etc. that help us cope with the huge amount of toxins we're exposed today.

regards, Thomy

EDIT:

just wanted to bump this thread, maybe there's somebody around who has another great idea :-)

Currently we have:

Selenium: Antioxidant, Chelator

Cilantro, Chlorella: Help chelate mercury

GABA: Counters glutamate

L-glycine, epsom salts: Against what in particular?

And liver health, immunity and a tight gut as general bonus points.

Sorry to be nit-picky, but it might be better to phrase the question as "which compounds protect us against poisons" since toxins are produced in living cells and organisms and I'm not sure mercury, for example, would qualify. Really interesting question though.

Yup, selenium is both an antioxidant and a chelator. Cilantro and cholrella help chelate mercury as well.

GABA counters glutamte, so should help against MSG and possibly other exictotoxins. As may red palm oil.

Taking at least 3grams of L-glycine per day and soaking in Epsom salt baths seems to work very well in helping remove toxins.

The catechins found in green tea bind/chelate many metals, including mercury.

My take? I always drinks green tea when eating sashimi.
