What does your Paleo menu look like?

Hey guys. I would love to know what you all eat on a daily basis. For eg: What you have for breakfast? Lunch? Tea? Snacks? And how has this benefited you?

lol...for a second I feared for the egg yolks!!! But then I kept reading and it was a happy ending.

You can look back at my prior posts but essentially iv lost weight, simplified my life, my multiple sclerosis has been asymptomatic and in remission and I have never felt better. Im more in tune with my body now than I ever have been. Im very flexoble and relaxed about it all, but firmly believe that paleo is one of the best blessings ive received. Hows that? ;)

my diet varies a lot, daily, monthly, as our finances change, seasonally, etc. but generally speaking, the following are in heavy rotation:

eggs for brekkie every morning, often with bacon or smoked wild salmon and kraut. home made yogurt (viili) that i make with heavy cream. coconut milk smoothies.

turkey breast rolled up with apple sliced, dipped in home made lemon mayo. cherry tomatoes and mozzarella or goat cheese. canned sardines. raw nuts- almonds mostly.

ground grass-fed beef. skirt/flank steak. stew meat. cod. shrimp. chicken legs. roasted chicken. pork loin. sausages- hot italian, sweet and chicken- gluten free from local farm. haddock. hake. clams.

i eat and cook with mostly with kerrygold butter, or homemade cultured butter, pastured pork lard and coconut oil (not a huge fan of coconut oil taste on everything).

i love my veggies. cabbage (butter braised or lacto-fermented), spinach, broccoli (love it roasted with olive oil, garlic then squeezed with half a lemon and some almonds- thats a meal), brussels sprouts sauteed in butter and bacon fat then roasted to crispy, kale in every way shape and form, swiss chard with eggs and cream, zucchini, eggplant, tomatoes, sweet potatoes, summer squash, kohlrabi.

i eat fruit in season. digging the fresh peaches now- ill have half a peach sliced and dipped in homemade creme fresh.

coffee with whipping cream at home, then black all day at work.

breakfast: 4 eggs, 2 bacon (or ham) (or cheese) lunch: 5 or 6 ounces of meat (beef or pork, that weeks roast) and a bunch of steamed veggies after work snack: 2 or 3 Norcal margaritas (too many of these and I will add in a can of tuna mid morning to help clear my head) dinner: some sort of steak or chicken or pork chop, whatever was cheap that week, with a small salad, maybe some veggies (and a baked potato with butter if I worked out, I have to earn the taters). bedtime snack: cottage cheese or greek yogurt, or both.

specifically today...

breakfast: two fried eggs, and fried potatoes (oh noez potatoez)

lunch- tuna salad

dinner- flax "breaded" fried/baked chicken w/ broccoli and... potatoes! lol

I usually don't eat so many potatoes- but we're broke, and they're cheap.. and well today I ran around a lot w/ the kids, scrubbed my entire kitchen floor on hands and knees, and then went to an hour long Zumba class... I think my body can handle some starch!

eta: How has paleo eating affected me? Well, I'm hot as usual.. I'm 29 with the skin of a 16 year old (Ok, so kinda lying, I do have stretch marks from having 6 babies.. but other than that, I glow lol)... I wear a size 1, I'm 5 feet, 105 pounds, toned.. yeah, and hot.. and vain apparently as I haven't mentioned any other benefit other than looking good nekkid!

I eat either eggs fried in coconut oil and bacon or chicken sausage or... lunch-dinner food for breakfast. I drink my coffee black or with coconut oil in it. For lunch or dinner ( I usually only have 2 meals a day) I eat something like the following...

  • Chicken and cauliflower rice with bacon grease/olive oil
  • 1/2 pound of grass fed ground beef with red onion, brown mustard and avocado or tomato
  • Steak (not grass fed) spinach salad with mild tasting olive oil, red onion and salt.
  • Curry and coconut milk chicken with veggies
  • Liver pate wrapped in Applegate Deli Roast beef and raw horseradish
  • Applegate ham wrapped around asparagus
  • Rib-eye (not grass fed) with horseradish and broccoli with olive oil
  • Smoked oysters with bacon as crackers
  • Kosher hot dogs with Bubbie's sauerkraut
  • Grass fed ground beef with mushrooms or green chili/tomato/avocado

If I still feel hungry after I eat I always have some coconut chips. For the first 3 months I would get a sugar craving as soon as I took my first bite of food and the coconut chips quelled it. Sometimes at night I will eat some blueberries with coconut milk.

If I go to a restaurant I'll get a burger with no bun or a steak with veggies.

I am about 6 months paleo and I only recently started adding more veggies and gave up dairy/dark chocolate to do the Whole 30. I have not found a good tasting /economical grass fed steak source and my diet definitely lacks fish/dha sources.

I am no longer melting cheese on a plate and eating it with a fork which I think is a step in the right direction. I crave puffed cheetoes (they are the perfect food and I don't care who knows it) for some reason and did not really eat them before paleo. I just don't keep them in the house. For the first 6 months I ate some 85% dark chocolate almost every night. I will eat pistachios after a meal instead of coconut chips but I try not to very often. Every night I drink a cup of hot tea maybe with coconut milk and just water during the day.

I don't worry about timing my food/carbs with my training at this point. I just eat when I'm hungry. If I am nervous or have any anxiety whatsover I wait to eat because I find I digest my food poorly unless I'm calm. I intermittent fast regularly about 3 times a week at random depending on how busy I am or how hungry I am. I never feel like snacking in between meals. If I do cheat and eat pizza or something I don't punish myself and eat it purposefully to enjoy it. It is rare enough that I don't gain any weight and I've found I digest non-paleo food well if I don't beat myself up about it.

I've lost about 30 pounds and now I'm mainly working on my body composition/training, sleep habits and food variety. I still desire SAD foods but not like I used to. My cravings are almost gone. The only supplement I take so far is a probiotic but I'll probably add fish oil this fall. I previously had about 8-12 tums a day for never-ending heartburn. I have had a tums once since starting paleo.

I've gone big breakfasts to get me through the day until a late dinner. If breakfast is not leftovers, lately its usually a skillet mess of 4 egg whites, some chorrizo, grass fed ground beef, turmeric and kimchi thrown in, a veggie like chopped broccoli, cauliflour or brussell sprouts, some bacon too. keep the egg yolks raw and blend in a bowl with coconut milk or coconut kefir, some frozen berries, cinnamon, etc.
