On my bacon it says to use within 7 days of opening, which to me means - Challenge excepted!

Medium cut, regular...with my twist. ( I create a bark on bacon)

Place bacon in sets of 4 strips on a foil baking sheet, apply VERY liberally fresh black pepper, onion powder, garlic powder, smoked paprika and of course, cayenne.

Place sheet in cold oven, turning heat to 325, leave for an hour and watch everyone in your home climbing the walls and writing you personal cheques for what the finished product might be, also, you'll see a rainbow ending at the door to your oven, it's a good time to have a shillelagh handy for those pesky leperchauns!

Truth.

Plain pork belly (not bacon, which is the processed version of it). Half an inch thick, fried slowly in olive oil, with lemon, oregano, salt, pepper added at the end. This is Greek style, called "tsigaridia".

Yes. I'm fairly good with all of them. However, it's got to be a bit crispy. No limp, chewy/rubbery, or soggy bacon please.

I'm not sure about texture and thickness, I simply require that there be ALOT.

Chewy, on the verge of crispy. Thick sliced. Make it so.

I dont eat pork, i cheated on december and ate a half pigs head tho, damn it was good and tons of flavour. Sadly the pork was of low quality, had poor teeth, propably from the grains. I hope i can source some better pork. Best part in the head was the cheek and the eye :)

I prefer bacon that is on the thicker side. Peppered bacon is lovely, but it's not a requirement. Chewy is the best texture, but it if it qualifies as crispy, it's been taken too far. I like to oven roast mine and save the rendered fat for other purposes, like my morning eggs.

I don't have a preference on the wood smoked to flavor it, but I'd love hearing other people's opinions on why one wood is better than another.

Best bacon i have tasted was guanciale. Made from pork cheek meat. Sometimes you can get the whole head almost for free. Its also the most interesting part of the pig. All the flavours and textures.

MIDDLE bacon, which is nigh on impossible to get any more (UK supermarkets sell only back and streaky)

Thick cut, unsmoked, crispy fat but not crunchy and dry met

Definitely crispy; prefer thin, but hand cut usually winds up pretty thick.
