The everyday potato, rice, grain-substitutes.

Going paleo changes your food habits. I really had to go through a big change as I used to rely on potatoes and grains as my primary source of food and feeling full.

I can see now that when preparing dinner I have actually worked out a new habit. Instead i use root vegetables a lot. I prepare them in the oven and this works out great for me. Onions, carrots, red beets, turnips, leek, garlic, radish and parsley root. All in the same pot! its fantastic. Along with this often some kind of meat with fresh bell peppers and asparagus and sometimes mushrooms.

What have become your favorite substitutes?

Basically the same as you. Root vegetables are awesome. Any of them tend to roast well or serve as a bed for the meat in my crock pot. That along with a variety of herbs spices and a variety of animals and different animal parts and you have a list that you can not get bored with.

This may not help you immediately, but in the long term -- I gave up the idea of substituting, and just ate in a new way. I know it sounds simple but I don't mean it to be glib at all.

I eat most vegetables strictly seasonally, but what you're doing with the pot and the root vegetables is great for fall and winter in my book!

I eat lots of carrots and eggs and nuts. I lovee all of the tasty paleo foods! Hot apples with nuts and dried fruits are one of my favorite desserts!

My 2 favorites are rutabagas and celery root. As Canis said, I don't think of them as substitutes; they are just my favorite stew veggies. In my case I still have white/sweet potatoes in small doses but they aren't staples. I also eat a lot more raw/cooked celery than I used to.
