Foods that effect insulin or growth hormone before bedtime & during sleep?

What foods,if any,can you eat before bedtime that won't dramatically effect hormone levels(insulin, growth hormone) during sleep?

and when should one eat if not before bed: all day fast, some meat right before going to bed, any other method is for peasants

Eh, in my experience it doesn't matter when you eat, its what you're eating that matters. Martin Berkhan makes the argument that late night eating is actually better for fat loss: http://www.leangains.com/2011/06/is-late-night-eating-better-for-fat.html

This sounds like a guy who wants to get ripped while he sleeps. Dude, if you do dairy, have a scoop of casein protein powder with a half-1oz of nuts (depending on how much fat you've already eaten during the day). That'll keep your blood sugar steady and your muscles growing all night long. As long as calories and macros are in check still, you'll get leaner everyday doing this.
