I am on a paleo diet but occasionally I stuff up (maybe I'm trying to go too low carb, maybe not eating enough calories) and go on a massive binge of anything that has sugar or grains...this probably occurs once a fortnight. Not good. Anyway the result is always my fingers feel hot and swollen and go bright red! Any ideas what this would mean? An allergy of sorts or just inflammation? I know obviously it means I have to tweak my diet so I don't feel the need to binge but I am still curious as to why the weird swollen hand thing would occur. Could a big insulin spike cause inflammation??? (I ate a fucktonne of sultanas, rye bread (naughty), and maple syrup...)

When uppig your carbs the body will bind up to 4 gr of water for each gram of carbs. That's why fingers feel swollen, usually the whole body swells a bit. In a couple of days the body will have used up the glycogen storages and the body will let go of the water retention. You'll probably run to the bathroom more often.
