Swollen hands after binge

I am on a paleo diet but occasionally I stuff up (maybe I'm trying to go too low carb, maybe not eating enough calories) and go on a massive binge of anything that has sugar or grains...this probably occurs once a fortnight. Not good. Anyway the result is always my fingers feel hot and swollen and go bright red! Any ideas what this would mean? An allergy of sorts or just inflammation? I know obviously it means I have to tweak my diet so I don't feel the need to binge but I am still curious as to why the weird swollen hand thing would occur. Could a big insulin spike cause inflammation??? (I ate a fucktonne of sultanas, rye bread (naughty), and maple syrup...)

My hands did that all the time pre healthy eating. Normally when I walked into the store...

Inflammation isn't necessarily arthritis, but I will admit that I have rheumatoid arthritis, and I was getting swollen hands right before it kicked in. Be careful! Go easy on your body.

Got exactly the same symptom especially if I binge on honey, chocolate & sugary foods (junk or not). It looks like gout & once it's there it doesn't go away easily. I have to go paleo high fat and eat less so my body can detox (this is my interpretation). Swollen, red... it's inflammation!

When uppig your carbs the body will bind up to 4 gr of water for each gram of carbs. That's why fingers feel swollen, usually the whole body swells a bit. In a couple of days the body will have used up the glycogen storages and the body will let go of the water retention. You'll probably run to the bathroom more often.

If I eat grains that's what my hands do. It's arthritis.
