So what is the difference between good fats found in animals and good fats found on oils, avocados, nuts, seeds etc. Someone please explain the difference between the good mono and poly, etc. etc.

This (http://www.paleonu.com/panu-weblog/2011/1/29/there-is-no-such-thing-as-a-macronutrient-part-i-fats.html) is a fantastic post over at paleonu.com about fats. Well worth the read. The subject is quite complex so I think it is best coming from somebody like Kurt.

If you're inclined to read a book on the subject, I'll add to Jason's excellent recommendation by mentioning Mary Enig, PhD's Know Your Fats.
