Is it necessary to soak marrow bones before cooking?

I read in Jennifer Mclagan's book, and others online that one should soak marrow bones before cooking to remove the blood. Is this purely for appearance or is there a safety issue?

LOL.. you caught that post eh - i was totally messing bout the soup.. ..STONES REFS..:) oh sorry youre right i was talking bout broth/stock ..eheh you meant just the marrow bones :) doh!

Thanks Mary, your talking about stock right? I like to take it a bit further and just eat the marrow right out of the bones! It's no goats head lol! But they are pretty darn tasty.

never soaked one other than in broth.

It just gets rid of the red water soluable protein stuff, so it looks more appealing after cooked.

Most directions that ive read say that you should soak them in cold water with your acid lemon/vinegar.. for 1/2-1 hour. And then gradually bring up the heat. The soaking allows for the acid to start breaking up the calcium (or something like that ) I also roast beforehand as well.

I never soaked them and I've been making it for a year now.
