Ideas on getting animal fat into the diet?

Hello -

I eat 60% fat 25% protein 15% fat, but currently my primary source of fat comes from nuts/plants. Any thoughts on how I can get more animal fat into my diet. I really prefer lean meats. I tried brisket and pulled pork last week but I don't have much experience cooking them and I really can't stomach too much of them.

I eat liverwurst every other day. Does anyone have a fatty meat recipe they could share with me?

Preferring lean meats and trying to incorporate animal fats are a tad contradictory. Increase the type and amount of fatty meats (i.e., less lean than you're accustomed to) a couple times a week. Gauge your response and adjust accordingly. For a recipe, how about making a bone broth. Use the fat to cook with and the broth to flavor.

Try fatty cuts in soups/stews. I always love a chuck-based stew. Regular beef stew, goulash... especially if you use a homemade beef stock as a base (marrow!). I don't mind animal fat in the first place, but I find I don't really notice it's there when it's been slow-cooking for a bit :) Plus it's nice and convenient to re-heat.

Also, save any fat drippings and use them for cooking things like veggies later.

Cook with saturated fats. They are very healthy for the body. Use cocount oil, lard, grassfed butter and ghee. All good stuff and will make your food taste delicious!

Begin eating small amounts of meat if you are unable to stomach more. Chicken or Turkey are good places to begin. Get thigh meat as opposed to breast meat which will contain more fat and be more flavorful. Work you way up to beef or bison. There are delicious recipes all over the internet, just replace vegetable oils with melted butter, go easy on the salt shaker, go heavy on the veggies and have fun!
