Duck Fat Fries...paleo or not

I love french fries even though they're extremely NOT paleo. Any thoughts on Duck Fat Fries? The potatoes themselves are not very paleo, but at least you're avoiding the canola oil from standard fries.

Personally, I find duck fat the most flavorful, with lamb tallow a close second.

Umm.. totally Paleo - both. Eat them now! I have a pint jar of duck fat in my fridge and use it for everything in addition to tallow and coconut oil. PS: Make a batch of sweet potato fries with that duck fat and prepare to swoon :)

not as often as i like, for sure. i wish i was one who had duck fat on hand all the time. thats why i take the chance whenever i can. i do seem to be able to get duck breast fairly easily, but am still looking for someone to procure some duck legs for me. ive had a hankering for some confit.

well, i only get to shoot ducks once every few years. my local butcher doesn't carry them. i could seek them out but prefer to just eat them when i dine out. where do you get your duck fat? you buy and roast duck often?

It goes well with liver and most offal, especially blood cake!

Actually, I'd argue that potatoes *are* very paleo.

I keep a quart of duck fat in the fridge at all times- consider it an essential!

hell yeah thats paleo! potatoes are NOT bad for you if you dont have body comp issues. dont let anyone tell you otherwise

i think anytime you have the opportunity to eat something fried in duck fat, you should take it or else be the fool!

ETA: except twinkies. twinkies fried in duck fat are not good.

I've made sweet potato fries with rendered beef fat lots of times.

All I have to say is delicious.

If I had the chance to eat duck-fat fries I wouldn't be asking about them on the internet, I would probably be shoveling them into my mouth with both hands. There's nothing wrong at all with potatoes, although apparently you may want to avoid eating the skins.
