I started paleo 6 weeks ago and am quite happy with it overall. I feel more sated and am no longer a slave to logging calories. :). I do, however feel that I may be overdoing it a tad on the fat yet I've heard / read that no need to worry about that so much. I'm a picky eater and often purposefully add a couple sources of fat to my meals by way of coconut oil/ butter, avocado and nuts.
I don't like egg yolks or dark meat poultry or sausages and certainly not organ meats..so I'm eating lean sources of meat and egg whites. Does anyone have any other suggestions to help me due to being so picky? I love veggies and can never get enough despite the " veggie belly" :)
Are there other means of getting healthy fats that I may Be missing? I am non dairy as well.

Ribeye. Bone marrow. Have you logged your fat intake into Cronometer or FitDay? You might be getting enough as it is. I'd personally stay away from the nut butters. There is a ton of information on this site as to why, but from my own experience they make my face really puffy, my joints hurt, and I feel less warrior-like when I am eating nut butter from the jar with a spoon. Plus it is the giver of death gas.
What is veggie belly? Do you mean your stomach feels bloated after you eat veggies? If so, you might want to read up on FODMAPS or check for other sensitivities.
Also, get ready to hate me.... but I think you should introduce the really nutritious foods you hate in small quantities until you become habituated to it. Fake it til you feel it. I know the picky eaters get really angry at this answer ("I'm a super taster!" "I have childhood trauma associated with asparagus!" "I'm a texture person!") but it seems like too many folks see this as part of their identity and it becomes self-limiting.
As a former picky eater myself, I started pretending to be an adventurous eater and it eventually stuck. I have seen the future and it is cow tongue, my friend.

The yolks are where the nutrition is. Egg whites are pure protein. But if you can't eat 'em, try:
Fatty fish like salmon
Bulletproof coffee (if you do coffee)
Google 'fat bomb smoothie' for Richard Nikoley's recipe of fatty goodness
I don't much care for organ meats/liver, but I like liverwurst (kinda like liver pate). US Wellness Meats has a very nice liverwurst without the usual crappy/suspicious ingredients.
Oh, and get chicken breasts with the skin on and eat the skin. It's cheaper and better for you.
