Can someone please hack my beef photo for fat percentage estimate?

Here's the grass fed beef leg from Australia I get in Japan. Can anyone eyeball this and guess-timate the fat percentage?

Also, just to clarify, a fat percentage of say 5% means by weight? So 100g of 5% fat meat has 5grams of pure fat?

To me it's veins visable in my abs while I dangle from a rock climbing route effortlessly ;)

I would say it is between 5% and 2% fat. Most of the cuts will probably be closer to 2%. If you want it lean, don't cook it in a sous vide -- that locks in the fat. If you want to go super lean, stick to ground beef or ground chicken where you can control the amount of fat.

When I want fat on rest days I eat fatty flank cuts ;)

Well, I want as lean and low fat as I can get for this cut. I always trim ANY visable fat. So what I'm asking is, considering totally trimmed, what fat percentage does the remaining meat appear to be.

Well, I purposefully want it as lean as possible. It's for Leangains training days with LOW fat. The same store has highly marbled and well fatty flank for the same Ozzy beef. And no, it won't be tough. I sous vide it at 55C for 24 hrs as melts in your mouth!

Looks trimmed to 0" and not much marbling. Low? Less than 10% probably.

Agreed, 5% would be generous for that leg. It has definitely been trimmed of fat.

And yes, 5% fat would be 5g of fat per 100g of meat.

But remember, that's an average, not per cut. This is a natural product, each one is going to be different.

If i had got that meat I would feel ripped off. Crispy fat is the beeeest part. Very lean cut.That is going to be quite tough if you don't braise it.
