bloating from excess fat and/or protein - what does it mean?

I have IBS with bloating as my main issue so I am very vigilant about FODMAPS and keep my carbs low. I've had a couple of experiences lately of major excess gas when I ate a larger than usual portion of fatty meat. What could this signify - what might I be deficient in?

According to recent stool tests, I don't have dysbiosis.

You might be exhausting your digestive enzyme pool. Easy enough to find out, try taking digestive enzymes 15 minutes before a meal and see if the problem persists.
