Suggestions for fats, tricky situation

I know there are a lot of posts about fat suggestions and I believe theres one from today itself. My situation is a little different. Im convinced I am Histamine intolerant (Ive tested it out twice by myself) and fodmap intolerant and just to make it interesting, I cant have casein. What options do I have? So far, Ive been taking swigs of EVOO, MCT oil and Coconut oil and cooking with duck fat. Am I restricted to just these few options until my gut heals? Sounds pretty boring.

I drink EVOO by itself pretty often, I find it delicious and very satisfying. I like the grassy, peppery flavor it has. Plus it gives you a spicy sensation once you actually gulp it down. It's specially nice on a cold day; it gives me a very warm, cozy feeling after drinking it.

Duck fat is pretty good, I just got some and I think Ill get some again. I do cook with Coconut oil too. All in all, Im trying to get atleast 2500 calories and being on a keto diet, I have to have a lot of fat. I just dont like drinking so much oil raw.

If you were stuck with only one of those choices it would be pretty boring, but you have a nice variety there. Is there any reason you can't cook with the coconut oil, too? The only other thing I cook with regularly is butter (I don't cook with duck fat, it's just not available to me, but it sounds delicious), and it's really the salt in butter that gives it MOST (not all, I realize) of the flavor, along with a certain umami. So try adding a little salt and/or caramelized onion in things you'd ordinarily cook with butter.

Have you tried ghee?
