Hey sorry if this has already been talked about but I work for a winery in Niagara and am active all day. My activity is mostly just being on my feet and weedin/pruning so nothing taxing but I am doing it all day. I also so 75 reps of 50 kettlebell swings 2x a week in addition to one lifting session of Deadlift 3x5 and rows 3x5 a wee (all around 5pm).
I am a little lost on what to eat when for losing the last little bit of fat I am holding onto. I am eating nuts/meats/veggies in the morning and then yams/meats/veggies lunch and dinner. Does anyone see any problems with this and/or any suggestions? Any help would be key whether it is things I could miss or should keep track of and suggestions for diet or exercise.

Paleo is not a fitness model diet, it won't necessarily shed those last 4-5% of BF for vanity.

75 reps of 50 KB swings, I wonder if that's a typo LOL. Not sure I could do 3750 KB swings at once.
It sounds like you are following a good formula for fat loss, a good diet with lots of low-intensity activity plus a few bouts of intense exercise per week. How much extra weight are we talking about? Some body types just hold onto a little fat (mine does) even when we're fit. "Getting ripped" is more of a bodybuilding fantasy than something regular people ever achieve.
One thing you might try is eating most or your carbs post workout, so they go to replenishing your muscles, and eating less carbs at other times. For me, carb intake and fat are directly correlated. I need my carbs when I workout but not otherwise.
You could also try fasting, a half day 1-3 times per week or a day every week or two. Although it sounds like you're almost doing that now.
