What would you make with Aidell's Mango and Jalepeno Chicken Sausage, if you also had on hand: mixed frozen veg (broccoli, mushrooms, onion, red pepper), frozen spinach, grape tomatoes, fresh red onion, fresh basil, spaghetti squash,
coconut milk, fish sauce, chili garlic sauce, garlic, lemon and lime juice, jalapenos, cilantro, chicken stock, jasmine rice, rice noodles, quinoa, black olives, tomato sauce, diced tomatoes canned,
Thai (Bangkok) curry powder, Sate curry powder, Cajun seasoning, smoked paprika, cumin... really any seasoning you can think of, I have!
I have so many ingredients for one protein and I can't decide what to make! What would you make? My fat sources are olive oil or coconut oil.

OH THIS IS KINDA LIKE CHOPPED WOO. Too bad I didn't see this last night.
I would make garlic-lime rice to start - brown lots of minced garlic (and minced jalapeno if you want also) in olive oil, toast rice, add half water, half chicken stock and a healthy dose of lime juice. Put some frozen spinach right in there, reduce the water a bit, no need to thaw and squeeze first this way. Brown sausages in a touch of olive oil then add chicken stock, smoked paprika and a touch of your chili garlic sauce, cover to heat through. Remove sausages to plate, add sliced grape tomatoes and cook quickly in the sauce. Put sauce and tomatoes over rice with sliced sausages.

What, no eggs? If eggs were available I would make a Thai curry frittata with a side of cold spaghetti squash tossed with olive oil and grape tomatoes, or a side of jasmine rice with chopped roasted jalape??o. Word!
