I am a bit sensitive to eggs, and want to try "just yolks" to see if that helps any. My question is: what do I do with the whites? Good eggs are expensive where I am, and it seems uber wasteful to just toss em. I wish I had a roommate or family member (heck, even a pet) to pawn them off on.

I give mine (no joke) to a buddy that owns a gym. They freeze really well, so I just throw them in a big zip-lock bag, label it with the date, and next time I see him I give him the box. I hate HATE wasting food, and he think yolks taste gross, so it's win win!
You don't have to find someone who loves egg white omlettes either- alternatively, egg white are great to use for adhesion of crusts or seasoning. For sweet potato fries, I coat the cut up fries in beaten egg white and seasoning, they turn out deliciously crisp. I also use them to coat cuttle fish, octopus, and squid when I am shallow frying them in bacon fat with an almond/old bay crust. This way, if I don't have a gym buddy who needs them, other people can use them too!
Swap them with someone that doesn't want the yolks, win win.

Start freezing them now. Then start asking around your friends, neighbors, co-workers etc. I'm sure you can find some one who would love your egg whites, especially someone who thinks the cholesterol in the yolks is going to kill him and is eating egg white-only omelettes. Maybe you can get his yolks!!!
Anyway, I would sure take them if you lived in my city! I have one three-year-old who will only eat whites. His twin only eats yolks. Right now that's working out pretty well, but the yolk-only boy is branching out and starting to eat a few bites of whites with his yolk. Pretty soon, I'm going to need more whites or I'm going to have to start giving up mine!

Always save them as they are pretty good protein even if only 6 or 7 grams an egg. They freeze just as is and an ice tray is perfect before getting them into a ziplock, and then into a smoothie. And nothing wrong witrh added one or two of the leftover whites into a morning omelet- it whips in unnoticed. Melt some dark chcoc, and whip the whites into Peaks- fold together with a single yolk and put into a small cup and bake for a great wheatless cake.
