No the best way to eat eggs is over easy cooked in butter with lots of bacon on the side. This is what eggs were meant for.

Hm @desi but aren't all eggs washed before being sold? When I sell eggs I give them a scrub in plain water, otherwise there's crap all over the eggs. What could rinsing them before cracking them do that's harmful?

^ that is interesting bachole, vegetable fiber has the opposite effect. The two best things I've found for bowel regularity are oranges and coconut oil.

I do raw eggs everyday in my green smoothie. The only issue for me is to make sure that I get enough fruit and veggie fiber to compensate for the slight constipating effect of high protein.

Katherine, why do you discard the egg whites? That does not make paleo sense.

I eat 1-3 raw yolks per day. Typically I discard the white.

The color doesn't mean anything, though. For some reason lots of "cage free" and better-ish eggs are brown, but I think that's correlation not causation. Marketing, darn it. But the brown are prettier!

Not sure, sometimes I get a small rumble in my stomach after eating the smoothie but it only lasts a few seconds. Not always, also I'm not sure if it's related to the super high amount of calories I'd ingested (my smoothies usually wind up around 1000 kcals)

Thank you. I know steve Reeves ate 4-6 raw eggs everyday blended with orange juice and knox gelatin, and he looks about as close to perfect as one can get. But then again, Dr. Mercola eats a lot of raw eggs too.

Good question. Here's my far from complete list of pros and cons on raw eggs:

Cons:

Pros:

I eat mostly lightly cooked omelets when I have eggs, but I do throw a raw yolk or two into a smoothie from time to time. I tend to shy away from raw eggs for the potential digestion issues and avidin, but they seem to have some potential benefits if that's not a concern.

I have been exploring the paleo lifestyle and was consuming raw eggs in smoothies for about a year. I only use free range, hormone free eggs from ethical farmers. I enjoyed the way they made smoothies frothy. I was just careful to wash them well before using. However, as a nutritionist I get my hair analyzed for nutrients and heavy metals from time to time and my scores this time showed I was deficient in biotin. It has never shown as deficient before. I chalked it up to the avadin and discontinued using them raw. Thought this might be relevant.

I don't eat them. Period. (unless you count the times I made raw egg mousse in my SAD days). I'm scared of salmonella, and raw eggs contain a protein called avadin that binds tightly with the biotin and prevents their absorption. If I want to put eggs in my shakes or smoothies, I heat-treat them first with maple syrup (the sugar in the maple syrup prevents the proteins in eggs from coagulating).

Occasionally, if I remember to, I will throw a raw egg into my smoothie. I also eat a cooked omelette with about 4 of my farm eggs daily as well.

I cannot answer to pros and cons. I have no way to analyse my body... don't really notice anything.

I simply wash my eggs first before cracking them...all pathogens are on the shell. I have no issues with digesting raw eggs. I cook them too depends on my mood.

I do about 3 raw eggs per day as well. From what I've heard the body can only process 20 grams of protein per serving and 3 eggs equals 18 grams of protein. I only do organic "brown" eggs and haven't had any problems yet.

I eat about 3 doz/wk raw, and have for about 5 years. They work well as the liquid part of a smoothie with berries/avocado/butter. I don't worry about the avidin binding biotin because there is biotin in the egg yolk. I don't suspect it will bind other biotin in my gut.

The biggest argument against raw is that they're not stamped with a date code. I don't eat them very fast and the carton in the fridge is already 3 weeks past pull date. I'm not exactly sure that it's important but those eggs have been well cooked before I ate them. Food poisoning has always been memorable but never for being enjoyable.
