Looking for new ways to spice up eggs over easy

I usually like the yolk flavor by itself but now I'm curious to see if anyone has unique and tasty ways to make eggs over easy

If you use any herb spice you can imagine (dried or fresh) and think would go well (and some you can't...), there are plenty of ways to makes things different. And then combine them, options, options... Classic parsley, and or cracked balck pepper can't go wrong for me often. But varitations are endless...

Rather than mine my mind for things i've done or read others do, here is link I just found... There looks like a lot options there and they could itnerest you...

I cook my eggs in about 1" of coconut oil on medium high heat - they set almost immediately, and they float in the oil. Once the edges get a brown, lacy look, flip the egg over and cook for 30 seconds. Serve sprinkled with sea salt, lots of chopped parsley, and chili flakes. DIVINE!!!

I like mine with curry powder. Sun brand is my favorite.
