left over egg whites

So I'm ready to make some home made Mayo. I finally found a common store brand (I think it was Kraft) that used mostly olive oil, but still has bad stuff, including PUFA. But that's not what this post is about.

In the process, I'm going to separate out egg yolks and be left with a bunch of whites. I might try macaroons, but what else interesting and reasonably Paleo can you do with the whites? Or just share your favorite macaroon recipe if that's as creative as we can get.

I use my food processor. I makes less mess than my counter top blender. I've never tried it with an immersion blender.

Awesome. Wish I had an immersion blender but since I don't, I'll use this method with my mini CuisinArt.

I also use the whole egg in mayo - but unlike the clothesmakethegirl, I don't need any patience because I use my stick blender and it's done in 20 seconds. I use half olive oil and half coconut oil. Here's the link to the recipe: http://www.lastappetite.com/how-to-make-mayonnaise-in-20-seconds/

It makes a cup of mayo and only uses one egg.

Use your egg white as binder in meatloaf, meatballs, etc.
