Still seeking a good egg substitute

I tried to make some Heart of Palm fritters by breading them with almond flour. I soaked Chia seeds as a replacement for egg. Unfortunately, the breading turned into a gooey mess. Should I just give in and use egg replacer, which uses gums and all kinds of flours? Or maybe I should should just give in and accept that I'll have some egg in my diet, albeit a small amount? Or perhaps I should just give up on breading things in general? I'd be interested in alternatives that would work in this scenario if you have them. Honey works but also changes the flavor by making it sweeter.

I have a number of positive auto-antibody tests (SS-B, ttg, GAD, and VGKC) but not clinical manifestations so no diagnosis. I don't know where the antigen is presenting and I don't intend to find out so I'm taking it very seriously.

why are you avoiding eggs?

Personally I would get over 'breading' things. I don't think it adds a lot to yum good food.

Not sure what your reason for avoiding them is but have you tried only eating yolks to see if they bother you the same as whole eggs? An explanation as to why they bother you would be helpful.

Do you have an egg allergy or autoimmune issue for avoiding eggs? I don't like breaded food anymore - even those with coconut or almond flour but I do use pastured eggs in whatever recipes call for them.

If you " do" dairy, and eggs are no problem, my favorite primal breading is a dip in beaten egg followed by a dip in cheap parmesan cheese. It's awesome for vegetables, fish, chicken wings, etc. Then bake at 400 until golden or deep fry.
