I try to work out about 5 days a week (hour to hour & half), cross-training mostly (as it's winter). Each workout is somewhat different from the previous (to prevent boredom). I eat probably the 80% paleo (more or less), been roughly 6mos (or a little more) on the diet. Feeling good overall.
I've noticed in the past couple weeks that there are times when I feel like I've hit the "wall" like 20 min into the workout... like I can't go on b/c I can't breathe. No sinus/pulmonary issues... I just feel like I'm short of breath when I exercise.
So, I've played around w/ intensity (just do yoga today or take the day off) & see how I feel. I've played with level of carbs. However, since neither of these things seem to be the issue (based on food/exercise/mood logs)... I'm wondering if I could be missing in minerals/vitamins? I do not take a daily vit., but do have specific ones (calcium/Mg/Vit D, Vit C, zinc & selenium)... and since my diet consists mostly of meat/protein & veg probably 3x a week, I was wondering if this is a possibility? Has anyone else experienced what I've (hopefully) described here? If so, what did you do/what worked for you? Recommendations appreciated.

Sounds a lot like overtraining. 5x/week of 1-1.5 hr workouts is kind of a lot, depending on your intensity.
You probably should see a pulmonary specialist regarding the shortness of breath, it could be exercised induced bronchospasm or some other treatable thing.
Also, I'd take a couple weeks of low to no intensity workouts. Walking, easy yoga, etc.
