I IF between 16/20/24 hours daily, generally 20 hours and on a friend's recommendation have recently attempted to follow a largely gluten-free diet. However recently I received some bad news which motivated me to eat right and exercise hard but I am just unsure as to how much of an impact stress can have on physical gain. Thank you

It can have huge effects! I can go from a rel six-pack to a bit flabby and back in two weeks depending on my level of stress. That stress can come from anywhere: work, gym, etc. If I've had an easy week at work but notice the flab, I know it's because I worked out too hard. So I just dial it back and it's like magic.
In your case, I bet you're doing way too much IF. I only IF if I'm traveling for work and don't want to eat possible crap. I think IF is something you should do intermittently NOT scheduled and often.

Agreed, stress can have HUGE effects. My body holds onto fat like it's the last fat in the galaxy when I'm under-slept, over-extended, or under a lot of mental/emotional stress. I might lose weight, but it'll be muscle not fat.
I don't know much about IF but it sounds like you could be overdoing it, especially if you have stressors in your life and are exercising hard too.

When your body is in a fasted state, your primal senses begin firing off SNS, which increases your mental alertness and prompts you to begin "hunting" for food - this heightened sense of mental alertness has also been mistaken for stress and anxiety.
Also, there is conclusive evidence showing that IF increases GH Output, which may also be mistaken for anxiety for some individuals, see my video about that here
Lastly, do you use stimulants such as nicotine or caffeine while you're fasting? When your body is in a fasted state, stimulants of any kind will have a more pronounced effect.
