i did keto/paleo last week, while doing intense cardio monday-sunday, and yesterday and today i have been carb crazy, im just insanely hungry, im just craving oatmeal,pancakes,potatoes,crackers,peanutbutter, choclate,etc constantly, what is the best solution to my problem, this week is also my recovery week(insanity workout) which ill be doing crossfit all week without cardio so im a bit concerned about gaining weight.

You're workout during keto adaptation is, forgive the pun, insanity. Going low carb is going to take at least a week, probably longer, in which you'll feel pretty tired and have the low carb flu. Doing high intensity cardio during your adaptation is setting yourself up for failure. It's telling that Crossfit all week is your "recovery". If you want to go keto, do light exercise during the adaptation (no, crossfit is not light) and focus on your diet. 80% of weight loss is diet anyway, so if keto is going to work for you, your weight will be fine with a much lower workout load.
And worrying about weight loss from one week to the next isn't helpful anyway. If low carb is going to work for you over the medium to long term, what happens to your weight when you dial back your workout for the first couple of weeks doesn't matter.

What were you hoping to acheive by going keto for a week?
It takes at 3-4 weeks to adapt to being in ketosis, so basically you starved your gluco-adapted brain of its principal fuel supply for a few days, and switched back before your metabolism had time to tap into its reserve energy supply (ketones). That seems like going cold turkey for no reason at all.
Not surprising that your metabolism is craving carbs after that kind of stress....
