carb options are pathetic... a person can only eat so many yams and beets

to make this short and sweet.

I am starting to become fatigued in regards to carb options, a person can only eat so many yams and root vegetables before he or she gets burned out in terms of satisfaction.

any suggestions would be appreciated.

go low carb -- then you don't have to worry about only having a million or so fruits and vegetables to choose from.

Hasn't hurt me, so far. I eat rice + butter + fried eggs, nearly the same as your dish.

Perhaps you wont like this, because its not paleo but try some white rice with butter and egg yolks. Its delicious. Can it really hurt to have this every once in a while for variety?

Butternut squash, pumpkin, zucchini, summer squash, any squash really. Taro or yucca. Sweet potatoes, yams. Bananas and plantains. If you tolerate some rice, that is an option, as is the case in the PHD. Next comes all types of fruits and veggies. I frequent raw carrot and raw beet/apple/carrot/ginger juices from wholefoods. Carrots are another root veggie in addition to beets.

There are so many fruit & vegetables (and yes, root vegetables) out there that I can't see how you'd end up bored. And then there's white rice.

If you want something "bread like" because that is what you're missing, maybe try some blue corn tortillas once in a while, unless you're doing very strict paleo. Just make sure they were treated with lime (slaked lime, not the citrus fruit, but it will usually just say lime in the ingredients). So far, blue corn is not gmo.

chestnuts and plantains are both extremely yummy.

I don't know how many root veggies you have tried but I love parsnips and turnips a lot. rutabaga, yucca, taro, and radishes are also good, and you can safely eat white rice too if you choose.

i go through phases where i'm into certain foods and then i'm not into them. if you're sick of them now, just eat something else. don't force yourself to like them because you won't look forward to eating.

rice mangoes papayas plantains yucca bananas

freeze bananas and blend them instant ice cream add some chocolate good

dried fruits are pretty not bad

pineapple

I find myself feeling this way at times. When I do I'll try preparing/cooking a little different. Lately I've been working out pretty hard so I'll mix in white potatoes or white rice once or twice a week on workout days. Also, I do find that I have to stop myself at times and make sure I'm not thinking about meals in the standard american diet way where meals are are more carb based and varied (various breads, various sandwiches, pastas, rices, etc.). We all get in a routine eating the same things at times. Change up proteins, extra veggies, new veggies, etc. and maybe you wont miss the carbs as much.

Just stop eating them then. When they sound good start eating em again. Maybe you just don't need that many carbs.

If you want to have them then try varying preparation methods/Tthe cuisine. There are plenty of evil concoctions that can be made if you 'need the carbs'...
