microwaveable mug cake that isnt disgusting?

fwiw i am not strict paleo, when i was strict paleo i lost too much weight.

i like to treat myself every now and then. i get bad chocolate cravings. i have tried several chocolate mug microwaveable cakes on the internet with almond flour and they were all disgusting (and i am not snobby about food!) they weren't too hard or anything, but just tasted like an eggy flavorless blob. i see people raving about these? am i missing something?? does anyone have a decent recipe to share?

i eat a lot of dark chocolate and coconut oil combinations but was looking for something different.

also i eat stevia really try to avoid sugar but a tiny bit of honey won't kill me. i avoid fruits bc they do a number on my blood sugar

that is so weird, i actually have goat extra goat cheese and i was thinking it'd taste good in a dessert somehow. thanks for sharing!

Goat cheese and dark chocolate is the best combination ever! Bacon / prosciutto wrapped around raw goat cheese and dark chocolate is one of my favorites.

"Microwaveable mug cake" sounds pretty terrible in and of itself. Why not eat some dark chocolate (even Baker's chocolate), cacao nibs, or even cocoa powder mixed with coconut oil, almond butter, cashew butter, or some other such combination?

  • paleomg has a real good chocolate one, if u add walnuts it's delicious. I think the walnut oil is the key. Google paleomg chocolate mug cake.

This is my super secret recipe that I use when I have a relentless dessert craving:

1/2 Cup unsweetened Almond Butter + 3 tbsp, room temperature

1 Egg

2 squares of 70% Ghirardelli Baking Chocolate, broken into pieces

Cinnamon, to taste

1/3 tsp of Baking Soda

1/4 tsp of Vanilla

Stevia, to taste

Preheat oven to 375 degrees.

I mash this up in a bowl and let it sit until the oven is ready. Then I pop it in like Betty Crocker and give it 10-15 minutes to puff up and turn golden brownish. It will start to look like a huge cookie if done correctly. It definitely feels like eating a chocolate brownie and it should not be a daily indulgence!

I do one in the oven (no microwave) but it is REALLY easy: 4 eggs, 8-9 oz chocolate (70% I use), 1/4 c butter. Melt the butter and chocolate together over a double boiler or in microwave if you have one. Meanwhile, beat eggs to 3x original volume. Fold melted chocolate/butter in eggs. Pour into muffin tins (will make 4 generous sized cakes, or 6 smaller). Bake at 350. Will make a pudding-like lava cake if you pull out before fully set, or an ultra moist fudgy cake.

I make one with a mashed banana, a spoonful or two of either almond butter or coconut butter, an egg and some cocoa powder. Spoon into cups but halfway into filling the cups, put a square of extra dark chocolate in there. Then when it's microwaved, the chocolate will melt and make it taste more chocolaty. One of these days I'm going to try tucking a spoonful of goat cheese inside.
