I forgot to write: process the coconut by itself until it reaches the liquid stage, then add the other ingredients

thanks! yes i couldnt believe how good the pancakes were...a genuinely guilt free dessert i think?!

1 lb Unsweetened shredded coconut in the food processor until it's a liquid. Up to 20 minutes, depending on your machine.

1-2 egg yolks

4-6 Medjool dates + any flavour you want (vanilla, nut butter, cocoa, rosemary-maple is good, if you want to sweeten with maple syrup instead of dates)

Line a container with Saran Wrap and fill it up. Sets in the fridge in a cole of hours, 15 minutes in the freezer. Slice into cubes or bars.

most of what i eat is very simple:

medjool dates stuff with shredded coconut (tastes so much like a mounds bar)

pineapple-orange-banana smoothie (just blend with water)- like a pina colada

salmon (i rub on the filet horseradish and coconut aminos- that's it) and saute in bacon fat- just plain good

i make those same pancakes and i top them with chopped macadamias and sauteed apples. it is HEAVEN.
