Paleo friendly sandwich

Hey guys,

thought id share this, since most dont consume grains / bread. Has anyone tried using cucumbers like this?? Seems like it would be very satisfying..

I've done the cucumber and bell pepper version of "bread," and it works great. I did versions of little finger sandwiches with the cucumber, having various fillings in cucumber slices (cut in rounds).

MathGirl- Pretty much. Didn't say not likening it to a real sandwich was a bad thing. I just call it what it is. It's stuffed cucumber. If I tried to sell it as a sandwich, it'd be disappointing, because it doesn't taste anything like a sandwich.

Looks like something I wouldn't mind trying and enjoying, but I'd never liken it to a real sandwich. ;)

HaHa..this is genius!! i will have to try this! obviously with my own ingredients. I get a bit of bloating reaction with cucumber but i find it ok if i remove all the innards. Cheers Tal!!

A warning - cucumber can be very gassy for some. Eating a whole one would kill me. I think the seedless (aka "burpless") kind are less problematic.

The only way I've done sandwich paleo style is with lettuce wrap a-la in and out burger. This usually works for me. Really good with Tuna.

I've done it with bell peppers - didn't think of cucumbers but why not :)

I haven't done it with the cucumbers cut vertically like that, but I have done slices of peeled cucumber with chicken salad (also with cherry tomatoes hollowed out with chicken salad. Also yums.)

That's a great idea! I make sandwiches with nori fairly often, but I might have to try this one as well.

Made this today with a zucchini and tuna for lunch. I can verify that it's awesome.
