What is nutritious about skin?

I'm massively craving skin right now: either pork cracklins or roasted chicken skin. It's not the fat, either, because I have some marrow bones in the freezer and that doesn't sound like it will fit the bill.

So what is it in skin that I would be craving? What other types of skin do humans eat? We normally use cow hide for leather: do any humans eat it?

Korion, I love my paleo food too BUT sometimes the chocolate devil is sneaking around, ohoh. That's what I meant with frustration or should I have said hard work. Sometimes it is. :-)

Don't agree, Isa :D. I LOVE gelatin, I LOVE beef, I LOVE most vegetables. So the diet is freaking easy for me, taste-wise. Having all the ingredients available constantly is a bit more difficult, though I now buy everything in bulk (20 pounds of meat every 2 weeks).

Sara, there are no different types of histamines. No plural here. Histamine can give you a good kick. Like champagne: very very high in histamine. Why are people crazy about bacon ? High in histamine ... Everything that tastes really really good is almost always high in histamine. That's what's soo frustrating with a histaminelow diet: leaving out all the very tasty stuff.

That's really interesting. A brief google search shows results for reasons to eat a reduced histamine diet (too much inflammation, hives, etc). Any idea of why having histamines in the diet would be beneficial? Or any idea what particular types of histamines are found in chicken and pork skin?

Hannibal Lecter always saved the skin until last. Like many here, he particularly enjoyed organ meat. Never once heard him fret about "how much liver is too much."

At least roasted chicken skin is very high in histamine. Pork in general is high in histamine too.

i dont know but roasted chicken skin is where all the flavor is at. i sure like it.

It looks like skin is high in selenium, so that might be it.

Probably the texture. Most fat doesn't get crispy like animal skin does!
