What to cook in?

I'm babysitting right now (kids are napping) and im making them dinner tonight (chicken). I used the last of the olive oil to cook in a couple weeks ago and have been making marinades lately, mostly with shoyu sauce because they only have vegetable oil and I refuse to cook in that. I think the kids are getting tired of the shoyu but I don't know what else to use. Any makeshift suggestions? Thanks

They only have country crock which is mostly veg oil

I've used orange before. I actually ended up draining the broth from a can of chicken noodle soup. I think I will squeeze some orange in. They have a couple mandarin ones and it is the only produce in the house. No vegetables!!

you shouldn't use olive oil to cook with anyway.

If you cook in a little water, the fat will melt off the chicken and help cook it also. Just add some spices to mix it up and make it interesting. I end up doing this a lot.

Have you tried asking them to get some olive oil? If you know where their grocery list is, you can write it in yourself and hope for the best. When you're a regular sitter you can make reasonable food requests. You can also tell them that the kids eat a lot more when you make this one dish, etc.

How about lemon juice or lime juice or a combination of citrus...orange? Chicken a l'orange! I like to marinate meats, fish and even veggies in fresh citrus with herbs like oregano, basil, etc. and bake. Vinegars sometimes work out well too.
